Is it even worth trying to get the culture to accept quality as a measure of food desirability anymore? I think only small, local and specialty markets like you serve can appreciate quality.

Local islands of really free markets that operate and compete on the basis of taste and health. In a sea of monpolized corporate "free" markets.
Could a network of cooperative farm markets that spread this quailty based free trade into a wider scale, maintain it's integrity? Doubtfull, look what is happening with organic dairying. Soon after a corporation markets the product, farmers are squeezed out and go broke.

Local is all we really can count on. Farmers and eaters. Savor your food, your journey, and the great spirit that fills the world with light.

Grass fed beef is definitely better than grain fed. There are numerous reasons to leave grain fed alone. I am for grass fed only and even though the cow seems to like eating the corn, its definitely not good for it. I am interested what prices you would find fair when it comes to grass fed beef prices. I am soon opening a grass fed meat restaurant and also plan on shipping it out to people. I will also look into jerky. This will be interesting to those that like beef but are not willing to pay the heavy shipping cost grass fed is associated with in most cases.
